It is a symbol of cultural amalgamation of Mughal and Malabari cuisines. It is extensively used in the Malabar region for making authentic recipes such as—Jeera rice, Payassam, Thalassery biryani. The product is known with diverse identities in different parts of the country—Ambemohar in Maharastra, Govind Bhog in Bengal, Ghee Rice/Jeera Sambha in Tamilnadu & Kaima rice in Kerala.
